Second Attempt at Blogging
Here is my second attempt at starting this blog. I just didn't have the time before and now that I do I hope to share my love of food and my family with the world.
So for starters I am on the road of weight loss although I am slightly behind my target. For some reason I have just lost motivation and I do not know where to pick it back up. It all started with a promise to myself to lose weight before I got pregnant again. Things were going great, I lost 12 pounds and I am so happy with that weight loss, none of my clothes fit. Then I thought that I was pregnant and I had to work for a postpartum client overnight and all that determination left as quick as it came. Writing about it will hopefully get me back on track and raise my willpower.
For dinner last night I made a skillet seared salmon with risotto and green beans with carmelized onions and garlic. It was a great dinner, properly portioned and delicious. I have to remember to take pictures and write down a general idea of the recipes to share.
The salmon was marinated in olive oil, garlic, fresh parsley, lemon juice, salt and pepper then seared in a hot pan that was drizzled with olive oil. The risotto was cooked with butter, shallots, white wine, chicken stock, salt, fresh grated parmegiano reggiano and fresh parsley at the end. The green beans were boiled while the onions and garlic were slowly cooking in olive oil, then they were all tossed together in the skillet after the onions cooked for about an hour with salt and pepper. I hardly measure anything so asking me to make a recipe takes some guesswork, lol.
Tonight I am going to make my husbands favorite garlic fried chicken with corn and sweet tea. I use a katsu recipe to make chicken nuggets that is to die for. It is so good. This meal isnt all that healthy but I didn't cook at all last week and I think my husband deserves a little comfort cooking, I will just make sure to have a salad!
